Strawberry Sorbet

To be fair, this recipe was inspired by my son, Jack, who sees things on Instagram and asks me if I can make it. I wish I knew where the original recipe came from to give the credit, but this is the version I came up with. Jack loves it – and requests it all the time. I love it because it is super healthy and very easy to make (especially if you use frozen fruits, so there is no need for using an ice cream maker at all!)

Strawberry Sorbet

Prep Time 30 minutes
Servings 4 servings

Equipment

  • 1 Digital Food Scale
  • as needed Containers for weighing ingredients
  • 1 Food Processor
  • 1 Ice Cream Maker (But only if your fruits are not frozen – easier without it!)
  • 1 rubber spatula
  • 1 Container for freezing (Quart size)

Ingredients
  

  • 1 pound Strawberries, frozen   (or fresh is also fine but will need to use ice cream maker to freeze)
  • 3 ounces by weight Banana, frozen (or fresh is also fine but will need to use ice cream maker to freeze)
  • 2 ounces by weight Lemon juice (freshly squeezed or from a bottle also fine)
  • 2 ounces by weight Agave syrup (can use maple syrup and still vegan – and honey is fine, but no longer vegan)

Instructions
 

  • If using ice cream maker, pre-freeze the freeze bowl overnight.
  • Gather all mise en place – ingredients and equipment.
  • In a food processor, puree all the ingredients.
  • This should be like a soft serve Ice Cream at this point. Taste the mixture and adjust to your liking– more sweetener syrup if not sweet enough, more lemon if needs more tartness. (This depends on how sweet your berries are!!)
  • If fruit was not already frozen, add to ice cream maker to process and freeze the sorbet. If processing, do so for 30 minutes and then transfer to container to freeze for a few hours or overnight before serving.
    OR just put in quart container and freeze. Of course, if you like the soft serve consistency then you are done! Enjoy!

Notes

  • You can certainly switch out the frozen strawberries for another berry, but just trust yourself to adjust the taste with the lemon or syrup to your liking. 
  • As I stated in the ingredients list, if you use agave or maple syrup, this recipe is naturally vegan. However, if you use honey, it is vegetarian, but not vegan.
