Radishes with Bread & Butter

I hope that some of you are as lucky as I am to have a wonderful local farmer’s market. I love this picture from a few weeks ago where I scored these beautiful Watermelon Radishes from the Matthews Community Farmer’s Market.

The local breadmakers at Verdant Bread are amazing! All of their breads are sourdough & I love their baguettes for this appetizer.

Radishes with Bread & Butter

Servings 4

Equipment

  • cutting board
  • Chef's Knife
  • Serrated Knife
  • Spreader or Butter knife

Ingredients
  

  • 4 slices Sourdough Bread
  • 1/4 cup Earth Balance Buttery Spread
  • 1-2 Watermelon Radish
  • Maldon Sea Salt As needed

Instructions
 

  • Wash and very thinly slice the radishes.
  • Cut 1/4-inch slices of the bread.
  • Spread the bread with the buttery spread.
  • Layer the radishes atop the buttered bread.
  • Sprinkle the radishes with Maldon Sea Salt.

I realize this is not much of a recipe – shout out to my “eat to live” friends. This is super simple and just is a perfect example of how beautiful ingredients just do not need much to showcase how amazing they are. You can use any radish, but the color on these watermelon radishes is just spectacular. I use the Earth Balance because it spreads so well and your vegan friends can enjoy this dish too. Of course, you can use any butter that you like. Just slice the bread – no need to toast it. The softness of the bread with the smooth butter and the crunchy texture of radishes makes this texturally so much fun for your mouth. Sprinkle the tops with a little Maldon Sea Salt and enjoy!

    No wonder your dad had such a love of radishes. Who knew so many varieties. I’ve been living sheltered out here. What a bountiful market! The watermelon color so festive too! Yum!
