History of Foodways: Biscuits in the South

At Johnson & Wales University, where I teach in the College of Food, Innovation & Technology, we started a program a few years ago called “Know Your Foodways.” I love doing these programs. It gives me the opportunity to research why we eat certain things in the South and how they came to be the foods we enjoy so much today. This was a topic I presented last year. I did a voice recording of my original lecture in conjunction with the power point slides I created at the time.
